Poached Egg for Breakfast

You've decided to bring breakfast to the bed. Your regular scrambled egg will not do the magic. Here is a simple technique represented in a beautiful way. Today's recipe is "Poached Egg on a Toast"

Vinegar & Egg
What you will need:
Freshest egg you can find
1.5 lt of water simmering water
A pot of hot salted water
A bowl of ice cold water
2 tablespoon of vinegar (about 1 tbsp per liter)
Cheese
Dill weed
2 teaspoon of mayo

Poaching an egg:

The most important thing for poaching an egg is to use the freshest egg (warm from the chickens ass if possible) you can find in the market (1-2 days old will do good). If possible use free range, organic eggs; you will definitely get better results. In a large pot, heat some water until it simmers (not boiling, simmering!). Pour vinegar, this will help egg white to coagulate around egg yolk. Never ever put salt in the water you are poaching. That will break down the proteins in egg white and white will not coagulate around yolk.

Break you egg on a plate or on a small bowl. Slowly place you egg in simmering water. With gentle touches slowly shape the egg white for not more than 30 seconds. Poach the egg for 3 to 4 minutes according to your taste. If you're going to eat the egg immediately, put it in the salted water directly. If not, put the poached egg in ice cold water. You can freshen up the egg any time you want simply by putting it in salted water (warm) about 30 seconds.

Cheese:
In a bowl, put cheese (cream, feta etc.), dill weed, mayo. Give it a nice stir.

Toast:
Toast a thick slice of bread, you're good to go.

Smoked Turkey:
Pour about a tablespoon of olive oil in a hot pan. I've cut my turkey in small pieces, you may leave it as a large piece. Salt, black pepper, etc. until it is crispy. With a paper towel, remove the excess oil.




Presentation:
Toast at the bottom, cheese above it and lastly poached egg. Sprinkle turkey on top, serve with slices of tomato. If you serve this with a glass of fresh orange juice or a cup coffee, and you don't get a morning treat then it is time to evaluate your relationship.
